Cheesecake. Forget about El Gaucho’s extravagant 150,000 VND per piece cheesecake for a while, and get into the kitchen. With this simple, low-carb dessert, you can easily enjoy your afternoon healthy snack within 3 minutes, allowing you more time living and less time in the kitchen, not to mention you do not have to bake a gigantic cheesecake for anyone but yourself.
You will need:
2 ounces (60g) cream cheese, softened
2 Tbsp (30g) sour cream (don’t have sour cream? Simply replace it with 2tbsp of unsweetened Anchor or Gr
eek yoghurt)
1 egg
1/4 tsp lemon juice
1/2 tsp vanilla
2-4 Tbsp (about 40g) sugar (taste as you go)
Let’s get started!
Mix all ingredients thoroughly in a microwave-safe bowl or mug.
Cook on high heat for 90 seconds, stirring every 30 seconds incorporating all ingredients. Refrigerate until serving.
Optional: Top with fresh fruit, whipped cream and nut meal.
Makes 1 one-cup serving.
