Mia’s Food Corner: Chocolate Truffle Cake
It was a beautiful autumn Sunday , and the gaudy sunlight was gazing through the windows, brightening up the tedious empty kitchen with its tender warmth . I left my windows opened, welcoming waves of mild winds that delivered the beautiful
fragrance of milk flowers into the room. With such scenarios, I just couldn’t resist the temptation to bake a miraculous treat as a toast to such a miraculous day. So here it goes, chocolate truffle cake 🙂
You will need:

6 oz/180g Bittersweet or 50% Chocolate

3/4 cup/150g butter

4 eggs

1 cup /125g sugar (I used 80g for those of you who doesn’t like sugar, but who doesn’t besides me 😛 )

1/2 cup/60g All-purpose flour

pinch salt
Let’s do it!

Preheat oven to 350F/180C. Grease and flour a 9″ round cake pan or springform. If using a springform, sit it on top of a small baking sheet to bake to ensure no messes in the bottom of your oven should the pan leak.

Over low heat, melt chocolate and butter in a saucepan (or use the microwave, but be careful not to burn the chocolate!), stirring frequently. Set aside to cool.

Beat eggs and gradually pour sugar in a large bowl until thickened. This took forever by hand with a whisk. Stir in chocolate mixture.

Gently whisk in flour and salt.

Pour into prepared baking pan and bake 30 minutes or until center is set.

Cool and enjoy topped with a sprinkling of powdered sugar or paired with a generous scoop of vanilla ice cream.
