Mia’s Food Corner: Cream Cheese Brownies
Sorry guys for not updating any food news recently. I hope you guys succeed in the first two cannot-be-easier microwavable recipes over the holiday. So now that we’re back to school, get ready to learn this new guilty pleasure that I experimented when I was 10, which turned out to be ambrosial. I have been using this recipe for almost every gathering, and it’s never failed!*wink wink*
Cream cheese and brownies in one pan?!? What? WHAT? I don’t know about you, but this is certainly included in my 21st-century-best-inventions list. Are you ready? Turn on the oven.

Ingredients: (serves 8)
For the brownies:
125g unsalted butter
200g white sugar
1 tsp vanilla essence/powder
1 large egg (*room temperature)
80g unsweetened cocoa powder
140g milk
190g plain flour
½ tsp baking powder
¼ tsp salt
2 tsp vegetable oil
Cream cheese topping:
230g cream cheese (room temp)
1tbs corn starch
1 tsp vanilla powder
400g sweetened condensed milk
1 large egg
*leaving eggs at room temperature would increase the size of your cake
How to:
Preheat 180 degree C
Brownies:
1. Spray a 23x5cm ( 8×12 inches) round baking pan, or a 28 x 18 x 5 cm (11 x 7 x 2 inches) rectangular pan with baking spray, or oil/butter/lard/parchment paper at the bottom of the pan.
2. Beat the butter using the electric mixer in a big bowl until it doubles the volume (maximum speed for about 5min)
3. Add in sugar and vanilla powder, continue to beat for the next 5 minutes
4. Gradually add in the egg while you continue to beat (2). Add in the cocoa powder and milk. Then add the oil.
5. Sift the dry ingredients into the bowl. With a wooden spoon (or even better, the spatula), combine the mixture until there are no clogs.
6. Pour in the baking pan and put in the fridge for 10min
Cream cheese filling:
7. Put cream cheese in a bowl and beat (medium speed) for 3 min. Gradually add in the cornstarch and the rest of the ingredients. Beat well until it all combines.
8. Pour the battle into the brownie pan.
9. Bake for about 40min at 180degree C. The cheese face should turn a little golden.
